It would be difficult to overstate how delicious this keto Big Mac pizza is. I didn’t even realize how much I liked Big Macs until I started into the keto Big Mac copycat kick, using Big Mac flavors on basically anything at all, including the pizza. I haven’t had a McDs burger since 1995, October 2nd, noon Central Time to be precise. It was the day of the O.J. Simpson verdict and I was in grad school in Bloomington, IN. My friends Matt, Sheila, and husband Sander walked from campus to our apartment to watch the verdict and grabbed lunch on the way. The only restaurant open on all of Kirkwood Ave was McDonalds. All other restaurants were closed, presumably because everyone was home watching the verdict. That was it. 1995. You might guess that I haven’t been big on Mickey Ds. In fact, I am not a fast food person at all but I will give Mc Ds its cred: it knows something about flavor. The Big Mac flavor combination is perfection and hits in a deep, emotional place.
So to achieve the Big Mac pizza and keep it keto, you’re going to pay special attention to the special sauce and to the pizza crust itself. Those are the big ones that can throw you off track.
For the pizza crust, I do recommend the fathead dough pizza, a recipe you can find here. You can make your crust with all mozzarella but I do tend to go half mozzarella and half cheddar, just because the cheddar flavor goes so well with the hamburger theme.
The calories are a bit over-estimated in the nutritional profile here because there is no decent value for the “special sauce” I use. In the calculator, I use mayonnaise instead which approximates the carbohydrates well in the sauce but overstates the calories.
This is a flavorful and keto-style Big Mac-inspired pizza!
With a hot crust, use the Big Mac Special Sauce as the sauce on your pizza, about 1/2 cup, reserving the rest for the top.
Top your hot pizza with dill pickles, shredded ice berg lettuce, and additional special sauce.
