I’m really getting into these keto chocolate mug cakes. Actually, I’m getting into any kind of keto mug cake or mug meal. I actually bought a microwave for these recipes. I had not had one for a decade because I haven’t found them to be useful beyond warming up a cold cup of tea. Enter the single-serving microwave mug cake. These things have been flying around Pinterest for years and it took me all this time to embrace them.
The beauty of the mug cake is that it is single-serving. You don’t have the rest of the sheet cake sitting around on your kitchen cabinet asking you to eat it. You make your mug cake. You eat it. You’re done. (OK, you could make a second mug cake and I admit that I have done so before, but I am far, far less likely to make a second mug cake than I would be to eat a second piece of sheet cake.) In any case, it’s one serving and that can be a very good thing.
In addition, this thing is almost instant. It will take a couple of minutes to put together and then about one and one-half minutes to cook in the microwave. That’s it! Done.
Kids can make their own. Husbands can make their own. It’s a whole new world, really.
So all you’re going to do is melt the butter in your mug in the microwave (20 seconds likely) and then you’re going to add the rest of the ingredients to the mug and stir it all up well. Pop it into the microwave on high for 90 seconds.
The “90 second” part may vary with your microwave and your elevation but it is a very good starting point. If your mug cake is dry, you probably want to go with 80 seconds next time. If your mug cake is soggy in the top middle, pop it back in for 15 seconds and make notes on the recipe to cook it just a bit longer next time.
Sometimes I will sprinkle on top of the finished cake my “caramelized cacao nibs.” Those are just butter melted in a skillet with a tablespoon or so of sweetener like erythritol (or a couple of little scoops of stevia powder) with a tablespoon of cacao nibs. Stir it all up, crisp the cacao nibs up a bit, and ladle it onto the top of the mug cake. That’s do!
You can sprinkle it with a bit of keto-friendly powder sugar-like topping as well (e.g. powdered erythritol).
I did lose 140 pounds eating a low carb diet with intermittent fasting but as I gush about this chocolate mug cake, I’ll add that in my most aggressive periods of weight loss, I ate very little dessert of any kind. My view is that items like this keto mug cake will help us avoid falling off the wagon completely and also make maintenance much more sustainable.
