Keto Elderberry Fat BombsThese keto fat bombs are flavored with elderberry with a satisfying cream base. I love these all year long but it is a freezer candy which makes it especially premium in hotter weather or when you are doing some intense exercise. The more I make these, the more I also like the candies thinner, maybe even on the order of half the thickness in the picture here. It is a soft candy but it has a better mouth feel, bordering on a “crunch”, if you are biting through the candy itself.

Elderberry juice can be a bit difficult to find. I actually make my own from berries we forage here in the Giant Sequoia National Monument. You can buy it online, often sold as a flu-fighting remedy. If you have difficulty finding it or do not want to pay the premium price it gathers out there on the market, you really can use any berry for this recipe. In fact, if you start with the whole berry and just mash it up, you will have a candy with low effective carbs because the berries will still have their fiber attached. Juices will strain that fiber out. My own homemade juice is lightly strained and so it still has some of its fiber.

The carbs in this recipe come from the elderberry itself and from the cream cheese. A full fat cream cheese will be a little lower in carbohydrates than a low fat or non-fat cream cheese.

Keto Fat Bombs, Elderberry Cream Cheese

  • 8 oz full fat cream cheese, softened
  • 1/4 cup butter, softened
  • 1/4 cup elderberry juice, unsweetened (just the berry)
  • 5+ little scoops of stevia powder (to taste)
  • 1 T lemon juice, optional

Keto Fat Bombs Steps, Elderberry Cream Cheese

  1. Bring cream cheese and butter to room temperature.
  2. Mix cream cheese and butter together using a mixer.
  3. Mix in elderberry juice, sweetener, and lemon.
  4. Taste for sweetener. Make adjustments.
  5. Place into freezer molds and store in the freezer until set.
  6. Remove from the molds and store in the freezer in an air tight freezer container.
