Keto Mug Meal, Pizza Style!I offer you a keto mug meal, pizza style! I love these mug meals for their flavor and convenience. They are quick. They are flexible. You cook them up in your microwave and the whole process will take about five minutes. You can bake these in an oven in baking dishes nested in water but you get into the “fuss department” quickly and lose the beauty of these dishes. If you are using a conventional oven, I would look for a larger casserole-style recipe instead.

This pizza mug meal is just one variation of potentially thousands and it is simply fabulous. I like to buy pepperoni in bulk and keep little bags of it frozen so that I always have a small stash available for little projects, like a single pizza, or a few mug meals. You can actually keep it all frozen in a big bag and you might be able to retrieve part of the stash from the bag without a big issue. In any case, I keep it around and on hand so that I can make this dish.

As for the keto, low carb aspect of this dish, your biggest offender is going to be that tomato sauce. Keep a low sugar version on hand, though a tablespoon of any tomato sauce is not likely to disrupt your diet all that much.

Unless you are using miniature pepperoni rounds, I would chop the pepperoni in quarters, just to get the flavor mixed in there a bit more.

  • 1 T butter
  • 1 T almond milk
  • 1 T almond flour
  • 1 T coconut flour
  • 1/8 t baking powder
  • 1/8 t Italian seasoning
  • 1 T grated parmesan cheese
  • 1 egg
  • 4 T grated mozzarella cheese, reserve half for top
  • 2 T tomato sauce, reserve half for top
  • 8 pepperoni rounds, cut into quarters, reserve some pieces for top

  1. Use a mug big enough for at least 16 ounces.
  2. Melt the butter in your microwave in the mug, on high for about 20 seconds.
  3. Add the almond milk, almond flour, coconut flour, baking powder, seasoning, parmesan cheese, egg to the mug. Stir well, especially combining the egg and mixing it into the batter.
  4. Add half the mozzarella cheese, half the tomato sauce, and half the pepperoni to the mug and combine.
  5. Cook on high in your microwave for 1 minute 45 seconds.
  6. Remove mug from microwave, top with remaining sauce, cheese, and pepperoni.
  7. Microwave for an additional 20 seconds.

Ingredients

  • 1 T butter

That’s it!

This one is simple and delicious. The only issue you might encounter is the cook time. You microwave may be more or less powerful than what is typical. If the mug meal is too dry, make a note of it and reduce the cook time by about 10 seconds next time. If it is extra soggy in the top middle after the main cook time, cook it an extra 15 seconds next time. That said, it will cook a bit more when you put it back in the warm the added sauce and to melt the cheese.
