I’ve got your keto mug recipe right here! This is the “turkey leftover” version of the “microwave mug meal” concept. After Thanksgiving or Christmas dinner, or anytime you roast up a turkey, this is a super simple way to use the turkey as well as the fixings. It is completely adaptable to the ingredients you have on hand that you love to eat together. In versions of this keto mug meal, I’ve used turkey, green beans, cheese, and mushrooms, in various combinations. It is really very difficult to go wrong, as long as you enjoy the combination.
For this recipe, after you melt the butter, you are simply mixing up the rest of the ingredients in the same mug. I tend to mix the baking powder in with the flour layer and mix it all together reasonably well so that the baking powder doesn’t clump, but otherwise, just give it all a good mixing and pop it in the microwave.
The only fuss with this one might be the cook time. Most meals need 90 seconds but yours might need more or less depending on the power of your microwave and how cold (or hot) the mug is starting out. If the dish is still soggy in the top middle after the 90 seconds, I’d pop it back in for another 15 seconds. If it’s too dry, I would eat it anyway and make a recipe note to cook it next time for 80 seconds instead of 90 seconds.
