Sometimes you just need a Sloppy Joe and the original version we all grew up with is definitely not in the low carb, keto family of eating and so I present to you: keto Sloppy Joes. 🙂
A traditional Sloppy Joe has a big white bun as well as ketchup and sugar in the sauce, all working against your low carb goals. I replace all of that here with some lower carb / keto options. You will use tomato paste instead of ketchup, a keto sweetener, and a touch of molasses to give the sauce some of its distinct musky flavor.
For the bread, I do recommend the keto 90 second bread (here), a single-serving microwave bread that does not completely replace the fluffy white bread bun of the Sloppy Joe of our childhood, but it gets us in the Sloppy Joe game.
