Keto Sloppy Joes

Low Carb / Keto Sloppy Joes

Keto Sloppy JoesSometimes you just need a Sloppy Joe and the original version we all grew up with is definitely not in the low carb, keto family of eating and so I present to you: keto Sloppy Joes. 🙂

A traditional Sloppy Joe has a big white bun as well as ketchup and sugar in the sauce, all working against your low carb goals. I replace all of that here with some lower carb / keto options. You will use tomato paste instead of ketchup, a keto sweetener, and a touch of molasses to give the sauce some of its distinct musky flavor.

Keto Sloppy Joes Meat

  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves of garlic, minced
  • 2 T cooking oil or butter
  • 1 T mustard powder
  • 1/2 cup tomato paste
  • 4 T keto sugar substitute (e.g. erythritol) or 8 mini-scoops of stevia powder
  • 2 T molasses (or keto brown sugar substitute)
  • 1 t salt
  • 1 t pepper

Keto Sloppy Joes Instructions

Keto Sloppy Joes

  1. Chop the onion and bell pepper.
  2. Mince up the garlic cloves.
  3. Heat up oil in skillet.
  4. Add chopped onion and pepper to the skillet. Saute for about 15 minutes, until the vegetables begin to caramelize.
  5. Add garlic. Saute for about two more minutes, taking care that the garlic not burn.
  6. Add mustard powder and tomato paste to the mixture, stirring the skillet contents well.
  7. Add ground beef to skillet. Cook for about 20 minutes until done, stirring occasionally to cook thoroughly and consistently.
  8. Add the sweeteners and salt and pepper.
  9. Taste and adjust the salt, pepper, and sweetness.

For the bread, I do recommend the keto 90 second bread (here), a single-serving microwave bread that does not completely replace the fluffy white bread bun of the Sloppy Joe of our childhood, but it gets us in the Sloppy Joe game.

In terms of keto eating, if you’ve missed the point that I am one of those “half of themselves” weight loss stories, you may want to poke around more and check out what I did. I combined the keto diet with intermittent fasting for some massive success. Do not miss the before and after photos!
