- 1 cup butter softened
- 1 cup erythritol
- 1/2 t liquid stevia
- 1/2 T molasses
- 2 eggs
- 1 cup almond flour
- 3/4 cup coconut flour
- 1/4 cup flaxseed meal
- 2 T peanut powder
- 1 t baking powder
- 1 t salt
- 1 cup keto chocolate chips sweetened with stevia or other keto sweetener
Preheat oven to 375 degrees.
Combine butter, sweeteners, and egg in mixer.
In a separate bowl, combine flours, peanut powder, baking powder, and salt. Stir together.
Combine flour and butter mixtures in mixer.
Stir in chocolate chips.
Place in small rounded spoonfuls on a non-stick baking pan, leaving a couple of inches between cookies. Flatten them just a bit.
Bake in the preheated oven for 8-10 minutes.
