This is a simple and delicious low carb / keto cucumber salad!

Ingredients
  

  • 5 cups cucumber sliced
  • 1 cup sour cream
  • 3 cloves garlic minced
  • 1 tbsp dill
  • salt and pepper, to taste

Instructions
 

  • Slice the cucumbers into rounds or quarter-inch rounds.
  • Salt lightly and toss.
  • In a separate bowl, mix together the sour cream, dill weed, garlic, and pepper.
  • Stir the dressing into the cucumbers, mixing thoroughly until the cucumber slices are well-coated.
  • Adjust for salt and pepper.
